Prosciutto Wrapped Frittata Muffins

2015-03-22 09.35.59One of the “bibles” in my kitchen is “Nom Nom Paleo – Food For Humans” by Michelle Tam and Henry Fong.  Kudos to her, also for recently being nominated for a James Beard Award for best cook book!

These little muffins are easy to make, last quite a while in the fridge, and are easy to heat up in the oven.  They are a great on-the-go option if you don’t have a lot of time in the morning to cook or have a sit down meal.
