I’m waiting patiently for Gregory Gourdet to come out with his own cookbook, because this recipe is amazing and I need more like it! For those of you who don’t know him, he was a contestant on Top Chef, is a pretty serious runner, and keeps a paleo diet. This recipe was published on RunnersWorld.com, and I make it at least every other week. I like to get creative with the presentation of this dish. Recently my local grocer has been stocked with beautiful multi-colored heirloom carrots, which makes the dish colorful and gorgeous!
