This was a new one for me from Nom Nom Paleo, and I have to say it turned out pretty darn good! (Joe went back for seconds, so…) There was also enough for both of us to have leftovers for lunch the next day. The only thing I chose to do differently than what the recipe called for was using fresh spinach instead of frozen. I wilted it down in the pan along with the onions and mushrooms. Other than that I stuck to her instructions.
Now, being married to an Italian, I would normally never dream of using tomato sauce from a jar. My Mother-In-Law might have a conniption fit when she reads this. Michelle Tam uses Rao’s, which I found at Whole foods, and I figured if it’s good enough for a James Beard Award nominee then it’s good enough for me. It is 100% Whole 30 compliant and tasted great. It’s made with Italian tomatoes, olive oil, fresh onions, salt, fresh garlic, fresh basil, black pepper, oregano. No junk in there! I’ll take it!
