It was another Nom Nom Paleo night at our house last night. I served this yummy dish over roasted broccoli, but if you’re not giving up grains it would be fantastic over rice. I made 2 substitutions with this recipe. I used rock shrimp instead of regular shrimp, and I used baby Roma tomatoes instead of cherry tomatoes. If you’re looking for a fast and delicious dish, this is it. It took less than 30 minutes from start to finish.
